Short-planned Party: Bar station style

My co-worker is throwing together a gathering tomorrow after work from some of his old co-workers. Now, we party planners GASP at the thought of something "thrown together" so fast! But let's face it, you don't want to pass up an opportunity just because you can't hand stencil your placecards! So I decided to share the advice I gave him to have a quick, inexpensive, fun and awesome after-work get together...

Think bulk serving... so I suggested making a "bar station" theme... for appetizers a Fruit and Veggie bar with lots of dips for guests to try.  Hummus, ranch, etc for the veggies and chocolate, yogurt, etc for the fruit...

Stop by Philly Pretzel Factory and pick up a big bag of soft pretzels... set up a Pretzel Bar! Dips could be for salty - mustard, cheese, etc or for sweet - chocolate, sweeten cream cheese, etc.

For the main course - fire up a big 'ol crockpot full of chili! It's filling, hearty and inexpensive! Set up your Chili Bar with all the toppings - sour cream, jalapenos, cheese, etc.  Even add some hot dogs or fries for guests to top with chili and give them a few more options!

For a side I told him to do a Baked Potato Bar! Super easy to prepare, inexpensive and filling! ...and extra bonus, you can put chili on it too! Just cook up your potatoes and serve up with lots of fun toppings like bacon, broccoli, green onions, etc.

Any suggestions you would give to someone with 1 day to pull of an informal dinner party?
