Fall cupcakes - yep, that took 2 nights after work lol..

So trying to fit in baked goods with a career and a teething 4 month old is insane! My boss asked me to make desserts for today's work party, so here's what I made (below). It was the first time making both so felt a little nervous, but had great feedback!

Of course, like always, I forget to take a great shot at home and end up with a fast one that makes them not look grand lol...


Sweet Potato with toasted marshmallow frosting

Vanilla with apple butter filling & butter cream frosting (and an "acorn")

Sweet potato ones... dense, ate like a meal - this was my favorite.  Not overly sweet, very moist and I loved having the marshmallow toasted (kitchen torch)

Vanilla apple butter ones... I am definitely saving this as my go-to vanilla cupcake and butter cream frosting, I really liked both.  The apple butter was too sweet for my liking, but then again, so are most apples lol.

Win them over with food!

Today was the first day in my new position/building so I spent the better half of yesterday making cupcakes - figured it couldn't hurt to try and win them over with food ;o)

Of course... BOTH of our cameras were dead this morning - so all I have to share is a bad phone picture!



Winter Night
Gingerbread cupcake, eggnog filling, brown sugar frosting

Eggnog filling (from Southern Living Mag)
  1 3/4 cups heavy cream
     1/3 cup sugar
     1/4 cup flour
  2        large eggs
      1/4 tsp ground nutmeg
      1/4 bourbon (optional - I didn't use)
  1         tbsp vanilla

   Whisk together 1st five ingredients in a heavy saucepan.  Cook over med-low heat whisking constantly - 10 to 12 min or until thick like cooled pudding.  Remove from heat - stir in bourbon & vanilla.  Cool to room temp, then cover with plastic - laying directly on it to prevent film and refrigerate 6-24 hrs.
